Oh such peachy creaminess. Pure and innocent like a baby’s cheeks. Serenade By Dawn is made of macabeo grapes, grown by our Spanish partnerfarmer Vicente Plantvid. While macabeo is usually blended in cava, we’ve experimented with turning this macabeo in a so-called monocepage (a blend of one grape).

Valencia’s friendly climate is characterized by an easy breeze but comfortable temperatures. That makes it a true walhalla for growing grapes. Many different grapes are grown here.
Unlike other white grapes, macabeo is a very easy grape. However, she can be processed in many ways: dry, sweet and sparking. But mostly she’s used for Cava. Macabeo is characterized by yellowish colour.
What’s so experimental about it?
Macabeo is generally used to make Cava. Most single varieties Cava tend to be 100% macabeo. Why not try to make a wine that's 100% macabeo? This monocepage turned out to be an absolute winner. Another first for the wine makers in Amsterdam!
