TASTING NOTES
This wine has a beautiful light ruby red color and entices with appealing aromas of cherries, strawberries, cinnamon, nutmeg, a hint of cedarwood, and subtle smokiness. The taste is full and well-balanced, with red fruits, sweet spices, and a touch of tobacco.

ABOUT THE GRAPE
Pinot Noir is known for its delicate and complex character. This grape variety has been cultivated for centuries and is now planted worldwide, although some regions are particularly well-suited for growing Pinot Noir, such as in Burgundy. This French wine region can be considered the home of this grape, especially the subregion of Côte d'Or. Some of the world's most renowned Pinot Noirs originate from here. Grand Crus abound, and it's not surprising because the climate, location, and soil composition of Côte d'Or are ideal for this grape. In fact, only Pinot Noir is allowed to be grown for red wines, so all the attention is focused on it. Further south, in the Corbières, Mathilde Broto also knows how to cultivate excellent Pinot, and these fantastic grapes have found their way into our bottles of Fantastic Mr. Fox.

 

The wine region of Corbières is located in the Languedoc-Roussillon region of Southern France. It is known for its diverse landscapes and microclimates, which allow for a wide range of grape varieties. Corbières primarily produces red wines, in which the Carignan, Grenache, and Syrah grapes often take center stage. These wines are characterized by their deep color, rich fruitiness, and spicy notes, with a balanced structure. Pinot Noir is a bit of an outlier but still shows that it has great potential in a region dominated by other red grape varieties. Corbières has built a growing reputation in recent years as an area where many quality wines can be found.

The pinot noir grapes were used for this elegant concrete-aged wine. During the aging process of 8 months French oak staves were added to give off subtle aromas of oak.

Grilled salmon, chicken with mushroom sauce, dishes featuring mushrooms such as mushroom risotto or grilled portobellos, pork chops, coq-au-vin, boeuf bourguignon, and soft cheeses like brie or camembert, or harder cheeses such as comté and emmental.

The ideal serving temperature for this Pinot Noir is around 14-16˚ C (57-61F). This temperature provides the perfect balance to showcase the aromas and flavors of the wine. However, this wine can also be enjoyed slightly chilled at around 12-14˚ C (55-57F).
